This coffee is produced in Southeast Chiapas near Guatemala and the Pacific border. The farms that make this coffee are located around the famous town of Tapachula, one of the most important settlements in the region.
An Indigenous Guatemalan group originally inhabited the settlement known as the Mames but the Aztecs converted this area into a city when they took over the land in the 13th century. This was not the only time that the land ownership here has been disputed between In Guatemala and Mexico, the area has had a long history of changing ownership. This area has always been important for its fertile soil, agriculture, and mixed climate due to varying altitudes.
Often the hotter lower-lying areas by the river are flooded whereas the cooler coffee highlands are safe – these varying climates allow the area to grow a variety of different crops for consumption and sale. Coffee only really became established in this area in the late 19th century and attracted with it the migration of European and Asian settlers.
The Micos de Noche or the night monkeys are famous in the region and can be heard on the coffee farms that make up this coffee. This biodiverse environment is perfect for their survival with a wide variety of things to eat. However, whenever they get the chance, they will quickly steal anything from an
unattended plate!
Best Prepared
When preparing drip brewing coffee, the direction you follow can greatly impact the quality and taste of your coffee. Here's a step-by-step guide on the best direction to prepare drip brewing coffee:
Ingredients and Equipment:
- Fresh coffee beans (whole or ground)
- Clean, cold water
- Drip coffee maker
- Coffee filter (paper or reusable)
Instructions:
- Choose High-Quality Coffee Beans:
Start with fresh, high-quality coffee beans. The flavor of your coffee largely depends on the quality of the beans. Consider your personal taste preferences and choose a roast level (light, medium, dark) that suits your preference. - Grind Your Coffee Beans:
If you have whole coffee beans, grind them just before brewing. The grind size should be medium for most drip coffee makers. If you're using pre-ground coffee, make sure it's fresh and within the manufacturer's recommended shelf life. - Select the Right Coffee Filter:
Choose between paper filters or a reusable metal or cloth filter, depending on your preference. Paper filters can help produce a cleaner cup of coffee, while reusable filters are more environmentally friendly. - Measure Coffee:
Measure the coffee grounds according to your desired coffee-to-water ratio. A common starting point is 1 to 2 tablespoons of coffee per 6 ounces (177 mL) of water, but you can adjust this ratio to suit your taste. - Prepare the Coffee Maker:
Place the coffee filter in the basket of your drip coffee maker. If you're using a reusable filter, make sure it's clean. - Add Coffee Grounds:
Add the measured coffee grounds to the filter, spreading them evenly. - Measure Water:
Measure cold, clean water according to the amount of coffee you want to brew. Use the coffee maker's water reservoir for this purpose. Make sure you use the appropriate amount of water based on your coffee-to-water ratio. - Pre-wet the Coffee Grounds (Optional):
Some coffee enthusiasts prefer to pre-wet the coffee grounds by adding a small amount of hot water (about twice the weight of coffee) to the grounds and allowing it to bloom for 30 seconds before starting the brew. This can help release trapped gases and improve flavor extraction. - Start Brewing:
Turn on the coffee maker and allow it to brew. The machine will heat the water to the optimal temperature and then drip it over the coffee grounds. This process extracts the flavors from the coffee. - Wait and Serve:
Wait for the brewing process to complete. Once it's finished, remove the coffee pot from the machine, and pour the coffee into your cup or mug. - Customize and Enjoy:
Customize your coffee with milk, cream, sugar, or any other additives according to your preference. - Maintain Your Equipment:
Regularly clean and descale your coffee maker to ensure it continues to produce great-tasting coffee.
By following these steps and experimenting with variables like coffee bean type, grind size, and water temperature, you can dial in the perfect cup of drip brewing coffee to suit your taste.
